'Nduja is a traditional Calabrian cured meat, particularly known for its soft consistency and spicy flavor. It is a sausage made from pork (usually cheek, bacon and lard) and plenty of chili pepper, which gives it its characteristic spicy flavor and intense red color. It is traditionally prepared in the Spilinga area, in the province of Vibo Valentia.
